SOIL TO SOURDOUGH
Our mantra is simple: organic, whenever and wherever possible.
For us, that means grain grown without artificial fertilisers, pesticides or glyphosate. We believe in allowing Mother Nature to do her finest work, nurturing the soil, supporting birds and bees, and protecting the land for generations of bread lovers and bakers to come.
CONNECTION
The strongest relationships grow from shared beliefs and values. That is why we partner with people who uphold the same principles, people who, like us, are not afraid of wearing dusty boots.
Our surplus milling bran, which contains much of the grain’s nutritional goodness, is fed to Mrs Kirkham’s cows. Those cows produce the milk used to make Mrs Kirkham’s cheese, which then finds its way into our speciality bakes.
Bran becomes feed. Milk becomes cheese. Cheese becomes bread. We connect the dots and keep goodness moving.
We have broken with a few traditions along the way. Rather than using olive oil transported from across Europe, we choose locally produced rapeseed oil. The oilseed rape is grown by Eden Yard, the same farmers who grow some of our grain as part of their crop rotation. It then travels just 30 miles to reach our focaccia, and we make over 200 of those beautifully golden loaves every week.
MAKING EVERY MILE MATTER
It is not simply about how far something travels; it is about making every journey count. Historically, our grain travelled thousands of miles before reaching the bakery. Today, it comes from farms 30 miles to the north, 84 miles to the northwest and 100 miles to the northeast.
We are fill-the-truck thinkers. The vehicle that delivers our loaves north returns carrying grain and locally produced rapeseed oil. By making the most of every journey, we reduce unnecessary mileage and lighten the footprint of every loaf.

FOOTPRINTS
Once upon a time, before our mill and before our relationships with British growers, we baked, like so many other bakeries, with grain sourced from around the world. It was all we knew. It was simply the baker’s way.
Then we threw out the rulebook and began writing our own.
We chose local thinking, circular thinking and responsible thinking. We began pioneering a different way: one rooted in the land, connected to its growers and accountable for its impact.

PACKAGING OUR VALUES
Our wax-lined bread bags took some finding, but the treasure lies in their lining. It helps each loaf stay fresher for longer, meaning less food waste and fewer journeys to replace bread that has lost its best life.
The bags are compostable, but we encourage our customers to reuse them first, giving each one a second, third or even fourth life.
Because the most sustainable piece of packaging is the one that keeps being useful.
LIVING YOUR BEST BAKERY LIFE
We employ people who live within walking distance of our Altrincham shops and just a short journey from our bakery doors.
For us, living well means having time for every part of life, not losing precious hours to a daily commute. Those hours can be spent with family and friends, wandering the moors and fells, or taking a wild swim in the Lakes.
The best life is one in which work, rest and play are held in balance.

Our team receives complimentary loaves and family treats to brighten the table, alongside a weekly fruit and vegetable bag to nourish life beyond the bakery.

OUR COMMUNITY
Our community is a wonderfully local gathering of farmers, growers, jam makers and independent producers.
We sell Hawkshead Relish preserves in our shops, the same preserves you will discover in our bakes. The rapeseed oil poured into our focaccia also has a proud place on our shelves.
It is a deliberately small collection, carefully chosen for provenance, flavour and shared sustainable values. Every product has a story, and every producer belongs to the landscape around us.
THE CIRCULAR BAKERY
We are constantly reimagining what others might call waste.
Surplus sourdough loaves are transformed into breadcrumbs and folded back into 5% of our sourdough recipes. It is an age-old baking technique, believed to have German roots, that creates deeper flavour, a finer crust and bread that stays delicious for longer.
We also turn surplus bread into sweet bakes, including our irresistible Ginger and Marmalade Bake, made with 80% sourdough breadcrumbs.
Yesterday’s loaf becomes tomorrow’s treat. Nothing good should go to waste.
CHARITY BEGINS AT HOME – OUR BAKERY HOMES
We have two homes: Bread Quarters in Cumbria and Altrincham Market.
Close to those homes are three remarkable charities: Waste into Wellbeing, Growing Well and Bounce Back. We support them with bread, time, and practical education, all given in the spirit of helping people eat well and learn how to bake, make, and nourish themselves.
Because a bakery should feed more than its customers, it should help nourish the whole community around it.
EVERY DAY IS A SCHOOL DAY
Education sits at the heart of our values. We share stories and practical knowledge about food, grain and baking with Women’s Institute groups, at country festivals and within the charities we support.
By passing on what we have learned, we hope to enrich the lives of our team, our neighbours and everyone who finds their way to our bakery doors.
