Rye Crackers 

Autumn is the ideal time to cosy up in the kitchen, do a little batch cooking and dust down your slow cooker. All with the goal of feeding your soul well over winter.

 

Why don’t you give a little time to organising all your bits and bobs leftovers from all your baking creations this summer, with the motive of planning some epic baking session this autumn.

 

Are we allowed to mention Christmas cake? Great British Bake Off is now in full swing, and whether you’re a Paul Hollywood fan or not, you’ve got to admit that Bake Off really gets you right in the mood for baking. In my case, I am already thinking about my Christmas Cake. This year everything things need to be remarkable, particularly the ingredients we use, as we’re going for all-out indulgence.

 

Let’s make a plan, then get creative

  1. Start using up your store of Gilchesters Organics, and think about giving your flour a new role, from not only baking sourdough but to create cakes and crackers.
  2. If you can, support your independents – all those producers that are determined to feed you and your family.  (Take a peek inside the Plumgarths Farm Shop the next time you visit the Bread Store – you’ll find lot’s of goodies inside).
  3. Take a peek bit at the bits and bobs in your own store cupboard. Get festive ready – this is your moment to create your show stopper! That never to be repeated, a once in a lifetime, flapjack recipe. Think about using all of the random apricots and dates that may have been forgotten in the bottom of your store.
  4. Make your store cupboard list and visit the Gilchesters recipe page for your flour reinvention inspiration.

Mrs Kirkham’s award-winning Lancashire cheese served on your very own homemade crackers!

Ruth Kirkham began making our now famous Lancashire in 1978.  For many years Ruth and John milked there herd of around 40 Holstein Friesian cows. The milk was pumped straight into a small vat in the dairy. This was then turned into cheese. They only had two presses and would make four 20kg (44lbs) cheeses a day.

Gilchesters Seeded Rye Crackers

Ingredients (makes enough to serve eight beautiful friends)

100g Gilchesters Organics Rye Flour

150g Gilchesters Organics Pizza and Ciabatta Flour

1tsp Sea Salt

4stsp Extra Virgin Olive Oil, plus extra to brush

Seeds of your choice – get inspired, we love a mix of seeds like pumpkin, sesame, sunflower

 

Method

  1. Preheat the oven to 180°C.
  2. Combine the flours and salt in a bowl. Make a well in the centre, add the olive oil and 140ml of water, then use your hands to form a dough (you may need a drop more water).
  3. Tip the dough out onto a floured work surface and knead bread briefly to combine.
  4. Roll out the dough as thin as you can and cut into the shape/ and size you prefer.
  5. Place onto a lined floured baking tray, brush with oil and scatter with seeds and sea salt.
  6. Cook for 10-15 minutes or until golden brown, be careful as they burn very quickly in the last few minutes of baking.

 

Serve alongside dips and cheeses of your choice! The ideal treat for the weekend!

    I made these a while back came out lovely and crisp. They kept well in a tin. I added some onion seeds on top and had with hummus a great snack
