A word or two from our founders

Growing, milling, baking and making – everything interlinked

“Steady as we go” has always been our motto. That means taking bold strides, embracing pioneering ideas and, every now and then, being just a little bit maverick.
It’s how we have always found our way forward.
Lovingly Artisan was founded by husband-and-wife team Aidan Monks and Catherine Connor, with a belief that food should nourish far more than the person eating it. It should nourish our communities, our farming families, our landscape and, perhaps most importantly, our treasured Mother Nature.
That belief is our heritage.
We choose organic ingredients whenever and wherever possible. Our own grain is always grown without artificial fertilisers or pesticides, some organically, and without anything that serves no meaningful purpose in nourishing the soil, supporting wellbeing or creating exceptional flavour.

A journey without a finishing line

For us, sustainability is not a destination or a box to be ticked. It is a way of life, one that continually asks us to listen, learn and find a better way.
Today, we proudly commission three farming families, an extended part of the Lovingly family, to grow our crops and nurture the land from which they come.
Our approach is simple: pay the right price, a fair price, which is often more than double the market value.
Why? Because thoughtful farming and good land stewardship have real value. We believe the people we bake and make for deserve food grown with care: a no-input approach that protects our landscape, respects the people behind each harvest and enriches the flavour and nourishment of everything we create.
Is it possible? Yes. It is already our reality, just as nature intended.

Milling as our forebears did

We stone-mill our grain just a stone’s throw from the bakery doors.
This brings the growing, milling and baking of our grain closer together, reducing food miles, strengthening our local food security and giving us a deeper connection to every crop.
Each grain is gently stone-milled, preserving its character, nourishment and flavour. Its purpose is wonderfully simple: to feed.

Nothing wasted. Everything reimagined.

Food security and doing the right thing are often at the helm as we seek better, more sustainable ways to bake our bread and make our pasta.
We believe every part of the harvest has value. Surplus semolina finds new life in our pasta, while the crumbs and remnants from our craft contribute to our no-waste approach to nourishment and flavour of future loaves.
From small, thoughtful changes to bold new moves, this is an adventure, and there is still so much to explore.
We are even developing our own artisan approach to oven energy: transforming waste bran and straw from our crops into fuel pellets that could one day help fire our ovens. So nearly there.
