So many of us have found hidden gems during Covid19, and in our case, we have created a few NEW sourdough gems too. Our lockdown bakery journey has been all about reinvention, exercising our imagination and collaborating with the like-minded artisans.

Small wins, BIG wins – Rinaldo!

Our foodie neighbour Rinaldo’s coffee roasters has remained open for our daily caffeine fix #essential! We all need to find a reward, and your version of good for you may differ from ours! We pray that we are on your list, as much as Rinaldo is on ours.

Our love of a great coffee is as significant as our deep-rooted belief in sourdough and the significant health benefits linked to eating a daily slice of Sourdough.

Creating bread that is good for you, your health, well-being and happiness, is one of the things that encourage us to leap out of bed in the middle of the night to bake for YOU.

We went on a journey of discovery

This has been an opportunity to create a health-driven bread menu

Creating the perfect Danish Rugbrød, a bread bursting with goodness, no dairy, no sugar, just pure wholesomeness, has been a lifetime goal. One we believe now will become a foundation for future developments.

The actual history of Rugbrød is not that clear, yet we believe it has a great future in Cumbria. In Demark, it’s the most popular method for an open sandwich known as a Smørrebrød. The style of lunches we all would have associated with Mathilde’s in Grasmere. A style of sandwich, inspired by lunching at home. Our Danish Rugbrød apart from being incredibly tasty, is the sort of bread you buy at the weekend. Then you find you’re eating daily throughout the week. Those that have visited the bakery have asked “How should I eat this bread?” Our answer is that you’ll be finding excuses to eat it every day, from breakfast to lunch and as a healthy treat in between – a slice of delicious health.

The health benefits to rye bread and rugbrøds are broad. Anti-inflammatory benefits, vitamin E from the sunflower seeds which is good for helping lower cholesterol, calm nerves, and we need this right now! Linseeds contain omega 3, and anti antioxidants. This recipe supports gut health, is recommended for premenopausal women and the list goes on! We are incredibly proud of this loaf, and the goodness it brings the homes it feeds. It takes 3 days to make and the method is a closely kept secret. What we can share is the blend of ingredients, from rye berries, brown & golden linseed, sunflower seeds, pumpkin seeds and millet all contribute to the perfect lunchtime sandwich.

This window of time has taught us all a great deal. The importance of community – we’re in it together, and shopping for others has become the new normal. Whenever we can, we seek Rugbrød onto shopping lists for others!

Preparing for the weekly groceries is far more rewarding when you’re making list not just for yourself but for others too. These small acts of kindness may become a way of life. We are now all more aware of how others want to live and eat, and this new founded knowledge is inspiring future ideas too. We are studying new approaches for those that want to eat well, yet don’t have large freezer spaces available at home – watch this space, as new ideas unfold, but for now, the Rugbrød is doing an incredible job.

These elements of lockdown I will treasure the most. An unexpected excuse to get to know the neighbours, what’s important to them, whilst we try and maintain our title of “essential”. A title we never want to lose. We believe this time has made us more creative, we have had the time to innovate, along with downtime in the garden which has had an incredible impact on us both. Perhaps on the future too.

Downtime spent gardening, sowing seeds and even growing our own ryegrass; all in the quest for flavours, nutrition and the perfect Smørrebrod – the ultimate Scandinavian open sandwich.

    Love Rinaldo’s coffee – the best there is! As for Smørrebrød and Danish Rugbrød, I couldn’t agree more – was my staple diet for 2-3 years when I lived in Copenhagen!
