Product description.
Rugbrød is a traditional, healthy bread, full of texture and loaded with flavour. Danish Rugbrød is made with wholegrain rye, which is high in fibre and very nutrient dense; containing manganese, copper, phosphorus and pantothenic acid.
One of the key ingredients, sunflower seeds are a fairly new addition to western diets but are vitamin-rich. Rich in nutrients; including copper, magnesium and thiamine and plant sterols.
Why it matters – They help to reduce cholesterol, improve arterial function, help your metabolic function and aid overall gut health.
What makes this product innovative
The benefits of combining these two main ingredients provide the consumer with a cross-section of vitamins, high levels of dietary fibre.
Our explanation
Excellent nutritional properties and both are easier to digest because the bread is a sourdough loaf. The bacteria present in the natural fermentation process eats the sugars and starch in the grains. This helps the gut to absorb all of the goodness found in this loaf.

As an artisan bakery, we have been at the forefront of this resurgence in traditionally made sourdoughs. Naturally fermented sourdoughs don’t contain the array of additives, manufactured yeasts, our customers and a generation of healthy alert consumers genuinely care about what they eat and more so now than ever before.
Creating an experience – It’s all about creating an experience, Rugbrød has a rustic appearance and this naturally, creates intrigue. We have found a whole nation of Rye lovers, sourdough cracker lovers who seek similar experiences of like-minded foods.
The method
When we make this bread we take all of the whole rye berries, linseed and sunflower seeds and create a cold ferment for them using water and a small quantity of sourdough mother, which we then leave for 24 hours to ferment.
This slow fermentation and baking process enables us to obtain a full fermented depth of flavour but also create a wholly bioaccessible bread which means that the nutrients and minerals contained within the bread can be absorbed by the body and utilised to full effect.
Notable ingredients – Made with Gilchesters Organics
The whole grain rye berries and whole grain rye flour we use is grown and produced by Gilchesters Organics. We soak the seeds and berries for 24hrs to break down the phytates, which means that the gut can access all of the nutrients and minerals they contain. The extra-long fermentation process delivers a genuine low GI bread, which can subsequently be accessed by those subject to a low GI diet. This is a genuinely nutritious bread made using only the finest ingredients that can play a significant part in a healthy balanced diet.
