Long before sourdough became a trend, it was a way of life that we chose as artisan craft bakers.

Why artisan?Handcrafted

There is something wholesome and authentic about handcrafted loaves, made by a baker’s hands, moulded with feeling, intuition, skill, and carefully crafted. No machine can ever replicate the experience of a barista, who consistently makes the best coffee, and the same holds true for bakers. 

A Sourdough bakery

sourdough bakery has a unique pace, always considered, never predictable; the only boss in the bakery is the dough. The boss of time, it likes to be slow; it likes to be turned in boxes. It takes attention, never too hot, never too cold. The dough is the master of flavour, of health benefits, and nutrition, and that’s our most significant reason for sourdough.

What is sourdough and why?

Sourdough are loaves that are naturally leavened using a sourdough starter, ours being over 35 years old, then fermented with wild yeast and three key ingredients: flour, salt, and water. Simple and natural.

Why does the fermentation journey take time?

The fermentation is the secret to sourdough’s flavour, bringing out the unique characteristics of the flours. Allowing time for the ferment will break down the gluten, making the sourdough loaves much easier to digest. For many who struggle to digest ultra-processed modern-made loaves, this has been liberating to their balanced diet and overall health.

The naturally fermented sourdough has a lower glycemic index, which helps regulate blood sugar levels, while also increasing the bioavailability of vitamins and minerals, making the bread more nutritious and aiding in the absorption of these nutrients.

The healthiest bread to eat

Typically, whole grains, wholemeal, and rye are all perfect for you and essential in a balanced diet. Whole grains contain more fibre, vitamins, and minerals, making them an excellent choice for your daily bread and morning body boost.
